2 flour tortilla shells
1 Chorizo sausage link
Shredded Mexican cheese
Lime – optional for garnish
Vegetable Oil / Non-stick spray
Griddle, or large fry pan
These quesadillas are a great way to get a Mexican themed party or dinner night going.
Heat a fry pan over medium high heat and add a tablespoon of oil
While chorizo is cooking: Remove a handful of cilantro leaves from the stems and give them a rough chop with your knife. Preheat griddle or second fry pan to medium heat and spray with non-stick cooking spray.
Take a knife and split open the casing on the chorizo sausage link. Squeeze the chorizo into the hot fry pan, season with a pinch of salt & pepper. Break up with spatula into small pieces. Cook chorizo until browned and cooked through.
Once chorizo is done cooking: place your tortillas on the griddle. On one half of each tortilla place: 1/2 of the chorizo, a handful of shredded Mexican cheese, and 1/2 of the cilantro. Fold the tortilla shell in half. Cook tortilla for a few minutes until the bottom is golden brown, then flip tortilla over, cooking the other side until golden brown and cheese is melted through.
Remove quesadillas from the heat, using a pizza cutter (or a sharp knife) cut the quesadillas into 4 even pieces. Serve the quesadillas with a spoonful of your favorite salsa, and lime wedge if desired.
