This hummus is my go to party dish that I always bring.  Simple to make and gets excellent responses every time.  The key to really good hummus?  Time.  After mixing the hummus, put it in the fridge over night.  The flavors all blend together and taste amazing.

What you need:

Food:
2 1/2 cups of canned chickpeas, drained and rinsed
1/3 cup of freshly squeezed lemon juice
1/4 cup of tahini
2 cloves of garlic, crushed
2 tablespoons of olive oil
1/2 teaspoon of ground cumin
1/2 teaspoon of cayenne pepper
1/2 teaspoon of paprika
pinch of freshly ground black pepper
1 teaspoon of salt
1/3 cup of water

Equipment:
Food processor or blender

Directions:

Making this hummus couldn’t be easier.  Simply mix all the ingredients together in a food processor or blender for 20-30 seconds until smooth.  Transfer to an air tight container and store for 24 hours in fridge.

The next day, plate hummus, add a drizzle of olive oil and fresh parsley as a garnish if desired.

Serve the dish with toasted pita chips or assorted cut vegetables for dipping.  The hummus also makes a really good spread for a veggie sandwich.
