Ah, breakfast.  A meal I don’t often get to eat as I’m running out the door trying to make it to work before Baltimore traffic becomes a standstill.  Luckily, I work right by a cafe and can get a bagel with butter for a buck.  But, if I had more time in the morning, I would make this oatmeal more often.  If you’re looking for something a little more exciting than cereal, but that doesn’t require too much effort, this oatmeal is perfect.  I know what you’re thinking…. why not just buy flavored oatmeal in a packet and add water.  Ok, you could, but those can have artificial flavorings and artifical sweetners.  Yuck.

What you need:

Serves: 2
1 & 3/4 cups of water
1 cup of quick cooking oats
1 raspberry herbal tea bag (I tried a few and for this purpose liked Bigelow Herbal Raspberry Tea)
All Natural Strawberry Jam


In a small pot, heat the water with the raspberry tea bag and bring it to a boil.  Boil the water for about 2 minutes then remove the tea bag.

Add the oats, a pinch of salt, and a spoonful of honey, reduce heat to medium.  Stir the oaks and cook for about 1 -2 minutes until the oatmeal thickens.

Remove the oatmeal from heat, distribute evenly between two bowls.  Add a spoonful of strawberry jam to each bowl.

Note: If you would like to make the jam fancy like I did in the picture:  Place jam in a blender with a very small splash of water.  Blend for 30 seconds.  Pour jam into a squeeze bottle and squeeze over oatmeal.
