• 2 cups of blueberries
  • 1 cup of sugar
  • 1 cinamon stick (or ground cinamon)
  • 1 orange

On a whim I purchased an ice cream maker from Woot.Com .   It’s been a great investment and a really fun way to try new ice cream flavors you wouldn’t think of, like pumpkin pie.

After making several batches of ice cream, I decided to come up with a way to spice them up.  This blueberry fruit compote is so easy, yet a delicious topping to ice cream, waffles, pound cake, and more.

 

Directions:

In a large pan, over high heat mix together blueberries, sugar, 1 cinnamon stick (or a few pinches of ground cinnamon), the zest of 1/2 an orange and the juice of 1 whole orange.

Bring mixture to a boil, then reduce heat and simmer for 10 minutes stirring occasionally.  Once mixture has thickened, remove from heat.  Allow to cool a little, and remove cinnamon stick if used before serving.
