- Cherry or grape tomatoes
- 2 cloves of garlic
- Olive oil
- Bay leaves
These roasted tomatoes are so simple you don’t really even need a recipe for them. I choose to add a few things to make them even tastier, but you could easily roast your tomatoes with just olive oil, salt & pepper and still have them be delicious.
To start, preheat your oven to 400 degrees.
In a small bowl, toss one carton of cherry or grape tomatoes, with enough olive oil to coat them. Add a pinch of salt and pepper and two bay leaves. Next add three sprigs of thyme and 2 cloves of garlic thinly sliced. Mix and spread out on a baking sheet. Put into the oven for about 15 minutes, until the tomatoes start to collapse.
You can use these tomatoes in so many ways. Throw them into your pasta dish, on top of pizza, in a salad, or just as a garnish on the side.
