  • 1/3 cup Vegetable Oil
  • 1/4 cup Honey or Agave to taste
  • 1/3 cup Lemon Juice to taste
  • 1 Tbsp Dijon Mustard
  • 1/2 Tbsp Poppy seeds
  • 1/2 tsp Salt

  • Fruit
  • Nuts

This is one of my all-time favorite salads.  It’s light, refreshing, and just screams summer!  The best thing is that I made it in less than 10 minutes.

Dressing

The dressing recipe is approximately what I usually use.  I don’t really measure, just eyeball it.  If it’s too tart, add more honey.  If it’s too sweet, try a little more lemon juice.  You can thin it out if needed with a little extra oil.

Manual Version
It’s so simple to make.  Throw all of dressing ingredients in a mason jar or plastic container and shake until combined.

Vitamix Version
I also like to mix it in the small container (32 oz) of my Vitamix, it blends so well.  To do it that way, put everything except the poppy seeds in the blender, blend on high to combine, then reduce to variable speed 1 and add the poppy seeds, blend for 5 seconds and stop.

Prepare the salad

Start with a bed of greens, add your favorite fresh fruit that’s in season, add some walnuts or almonds, and serve with dressing. The dressing makes about enough for 6 people depending on how much everyone likes to use.
