• 4 cup raw unsalted cashews
  • 3 tbs vegetable oil
  • 1/4 cup honey
  • 2 tsp ground cinnamon
  • 1/2 tsp salt

Homemade nut butters are amazing!  You can easily customize it to the way you like, and jazz it up with your own mix-ins.

Please don’t try this in a regular blender.  I use a Vitamix 750.  If you don’t have that, follow the instructions for a food processor version (click here).

To get started, put all of the nuts in the Vitamix, start on your lowest setting, and gradually increase to your max.  Use the tamper to push the nuts down towards the blade.  Cashew butter comes to together pretty quickly.  Once combined, remove the tamper and drizzle in the oil.  You will hear the sound change as the nut butter starts to reach the right consistency.  The oil helps make it nice and smooth, but it’s totally optional, many people don’t use it.

Stop the machine, add the honey, cinnamon and salt.  Blend until just combined.  Store in an airtight container for about 2 week.

This was great with honey twist pretzels, some jelly, or even just eating off the spoon!

NOTES:  If you can’t get it to come together, keep processing and pushing towards the blades.  A little extra oil may help if you have very dry nuts.

The butter does harden significantly if stored in the fridge.  If you use roasted nuts, some people won’t refrigerate.  Raw ones should always be refrigerated.  It’s still delicious.  I recommend letting it warm up for a few minutes before use.
